How do vouloir, pouvoir and devoir change meaning?

Vouloir = to want. Pouvoir = can/may. Devoir = must/have to. All three are irregular and frequently followed by an infinitive: "Je veux partir", "Je peux partir", "Je dois partir".
Why
Vouloir in polite form: je voudrais (I would like). Pouvoir in polite form: je pourrais (could I).
