When do you say "bonjour" vs "bonsoir" in French?

Bonjour until roughly 6 pm or sunset; bonsoir from evening onward. In shops and restaurants, staff switch to bonsoir after around 6 pm.
Why
The cutoff is social, not strict. Bonne nuit is only used when leaving or going to bed — never as a greeting.
